Mango Shake


Mango Shake

Ingredients

2cups ripe mangoes, peeled and diced
1tsp light brown sugar
1cup vanilla ice cream
1⁄2cup skim milk
1/4cup chopped mango(garnish)
1/4cup vanilla ice cream(garnish)

How to Make

1.Run mango and brown sugar through a blender or food processor until smooth and well-blended.
2.Place vanilla ice cream and milk with mango mixture in machine and process again until well      mixed.
3.Pour into four parfait glasses and garnish each with a ice cream and chopped mango .

Rava Pudding

Rava Pudding 

Ingredients

2 cups Rava
1 litre Milk
3tsp Sugar
6nos Cashewnut
6nos Raisins
3nos Egg
2tsp Grated coconut
2drops Vanilla essence

How to Make 

1.Hot a pan and add milk,sugar,rava and mix well.Cook till the mix becomes thick .
2.Beat 3 eggs in a bowl and add grated coconut and vanilla essence .
3.Add the egg mixture into the cooled milk mixture and mix well.
4.Make caramel syrup in a bowl .Add roasted cahews raisins and grated coconut  for garnishing.  
5.Pour the mixture into the caramalised bowl and cover with foil paper.
6.Take some water in a pan .Put the bowl in the water and cook about 30 minutes .
7.Allow to cool after 30 minutes .Then refrigerate for 2 hours .
8.Serve it on a plate upside down .

Kerala Chicken Roast


Kerala Chicken Roast

Ingredients

1 Kg Chicken


For the marination:

1/4 tsp Turmeric powder

1/4 tsp Chilli powder

1/4 tsp Coriander powder
1 tsp Vinegar/lemon juice
5 Garlic cloves
3-5 Green chillies
To taste Salt

For roasting:
3 Medium Onions
1 Large Tomato (remove skin & make puree), blanched
2 Green chillies (slit)
3 sprigs Curry leaves
1/4 tsp Garam masala powder
1/4 tsp Pepper powder
1 lemon Lemon juice
Oil

How to Make

1.Clean and cut the chicken into medium sized pieces.
2.Make a paste of all the ingredients under marination.
3.Marinate the chicken pieces with this paste and keep aside for an hour.
4.Cut onions into very thin slices & fry in hot oil. Drain them & keep aside.
5.Fry the chicken pieces in the same oil until almost done. Keep the pan covered so that the chicken does not get browned, but is cooked inside. Drain them and keep aside.
6.Heat 2 tbsp of oil in another pan (You can use the same oil in which we fried the chicken pieces. This will enhance the flavour). Add slit green chillies and curry leaves. Saute for 1 minute.
7.Add the tomato paste to this and saute for 1 minute.
8.Now add the prepared chicken & roast until it is dry.
9.Make sure that all the chicken pieces are well coated with the tomato paste.
10.Sprinkle garam masala & pepper powder & mix well.
11.Add lemon juice and mix well. Check for salt. Add a little if needed.
12.Now add the fried onions and mix well.13.Tasty Kerala Chicken roast is ready.
